Passion Fruit Nice Cream

This is so simple it can hardly be called a recipe. With just a couple ingredients, you can have a sweet frozen treat in under 5 minutes. Passion fruit is rich in vitamins A & C as well as beta carotene and fiber. It’s one of my favorite flavors, packing a bold, tropical punch.

Ingredients:

  • 2 frozen ripe bananas* (see note)

  • 1/4 cup passion fruit flesh & seeds (the wrinkly ones are the sweetest!)

  • 2 tbsp non-dairy milk, yogurt, water or fruit juice

Directions:

Combine all the ingredients in a high-speed blender. If you have a Vitamix, you’ll need to use the tamper to constantly smoosh the frozen banana into the blades. If you’re using a Nutribullet, pause every 10 seconds to stir and redistribute the fruit to allow it to puree. Once it’s smooth (about 60 seconds), transfer to a bowl and eat immediately.

*Note: When you have a few extra bananas with dark spots, peel them and toss them into the freezer in a sealed bag or container for 3+ hours to have on hand for frozen desserts, banana bread and smoothies. Use within 2 months for best flavor.

Serves 1 - 2.
