Glorious Tahini Dressing

With a few key ingredients in your fridge, you can have a creamy, dreamy, gloriously flavorful salad dressing in just a couple of minutes. There’s no added oil; all the richness comes from tahini, which is roasted sesame butter. The miso paste lends a deep umami flavor and packs it’s probiotic punch, making this the perfect accompaniment to veggie dishes.

Ingredients:

  • 1/4 cup tahini

  • 2 tbsp miso paste (I prefer a mellow white miso paste)

  • juice from half a lemon

  • 1/2 tsp dried dill

  • 1/4 tsp garlic powder

  • 1/4 tsp onion powder

  • freshly ground pepper to taste

  • water to thin

Directions:

In a bowl or measuring cup, whisk together the tahini, miso paste, and lemon juice. Stir in the dried spices to combine, then gradually add in cool water, mixing constantly until desired consistency is reached.

Transfer to a clean jar and store in the fridge for up to 10 days.

This is delicious drizzled on roasted veggies, buddha bowls, and salads.

Makes 1/2 - 3/4 cup of salad dressing; easily doubles for a larger batch.
