Cozy Gingerbread Oatmeal

As the weather cools off signifying the turn of the seasons, warm breakfasts are a great way to rev up for the day. This oatmeal is spicy, comforting, filling and delicious. Blackstrap molasses imparts that classic gingerbread flavor, and adds a powerhouse of nutrients including iron, calcium, magnesium and selenium. Topped with a yummy (and pretty healthy) “brown sugar crumble”, this is the perfect way to start the day.

Ingredients:

  • ½ cup old fashioned rolled oats (gluten free if necessary)

  • 1 cup water

  • ¼ tsp ground ginger

  • ¼ tsp cinnamon 

  • A small pinch of ground cloves, optional (& delicious)

  • 1 tsp blackstrap molasses (nutritionally superior to fancy molasses)

Brown Sugar Crumble Topping:

  • 1 tsp coconut sugar (date sugar or regular brown sugar also work)

  • 1 tbsp flax seed

  • 1 tbsp almonds, pecans or your favorite nut

  • Pinch of salt

Directions:

In a small saucepan over medium-low heat, combine the oats, water and spices. Cook, stirring often for about 3-5 minutes until all the water is absorbed and the oats are tender. Remove from the heat and drizzle in the molasses. Stir to combine & transfer to your favorite bowl. In a small blender, food processor or spice grinder combine the topping ingredients and whiz until uniformly powdered. Sprinkle the crumb topping over the oatmeal and add plant-based milk and fresh fruit, if desired. Enjoy!
